Ingredients

  • 1 lb (454 g) chicken breast
  • Olive oil
  • 2 TBSP (30 ml) of butter
  • 1/2 tsp (3 ml) each of salt and pepper
  • 1/4 tsp (1 ml) cayenne
  • 2 tsp (10 ml) chili powder
  • 1 tsp (5 ml) each of cumin, paprika, and dried cilantro
  • White corn tortillas
  • 1 cup (240 ml) Queso Blanco Velveeta
  • 1 can Rotel Mexican Style Lime & Cilantro


Instructions

  1. Chop the chicken into bite-sized pieces. Melt the butter in a pan over medium-high heat. Sprinkle with salt, cayenne, chili powder, cumin, paprika, dried cilantro, and black pepper. Cook the chicken until it reaches an internal temperature of 165°F.
  2. Pour in the Rotel (drain just a little juice from the top) and add the Velveeta to the pan. Mix well and allow the cheese to melt.
  3. Drizzle a bit of olive oil into another pan. Heat the corn tortillas in the microwave. Place a portion of the cheesy chicken mixture onto a tortilla. Fold the tortilla in half and fry until both sides are crispy and golden brown.
  4. Savor the tacos! They taste amazing with sour cream and Pico de Gallo!

Notes

  • Marinate the chicken in a mixture of olive oil, salt, pepper, and spices for at least 30 minutes before cooking for enhanced flavor.
