Ingredients
- 1 sheet puff pastry defrosted but still cold
- 4 tbsp (60 ml). beef tallow
- 3 large garlic cloves minced
- 1/2 tsp (3 ml). dried Italian seasoning
- 1 tbsp (15 ml). minced fresh parsley and basil
- 1 cup (240 ml) shredded cheese (mozzarella, gouda, or anything you like!)
- 1 tbsp (15 ml). cheese (parmesan)
Instructions
- Set your oven to 400°F to preheat.
- Unroll the puff pastry and gently smooth out any joins using a damp finger. Position the pastry on a baking tray lined with parchment or a silicone mat.
- In a small saucepan, heat the beef tallow until it liquefies. Stir in the minced garlic and dried Italian herbs and cook for 1-2 minutes until the garlic aroma is released. Use a brush to spread this garlic-tallow blend over the pastry sheet. Scatter the shredded cheese evenly over the mixture.
- Carefully roll the pastry into a cylinder and slice it into pieces about 3/4 inch thick. Arrange the slices on the prepared baking tray. Coat each slice with the remaining tallow mixture, then sprinkle with the fresh herbs and parmesan cheese. Chill the prepared dough in the fridge for 10-15 minutes to maintain its coolness.
- Place in the preheated oven and bake for 10-12 minutes until the pastry is risen and golden.
- Take out of the oven and serve either warm or at room temperature, with marinara sauce on the side if desired.
