Description

A delightful and easy dish featuring perfectly cooked shrimp, fresh spinach, and melted cheese enveloping hearty penne pasta.


Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the penne pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté for about a minute.
  3. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
  4. Stir in the fresh spinach and allow it to wilt gently.
  5. Add the cooked penne pasta to the skillet and mix everything thoroughly.
  6. Sprinkle shredded cheese on top and stir until melted. Season with salt and pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
