A delightful and easy dish featuring perfectly cooked shrimp, fresh spinach, and melted cheese enveloping hearty penne pasta.
Ingredients
- 8 oz penne pasta
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the penne pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté for about a minute.
- Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
- Stir in the fresh spinach and allow it to wilt gently.
- Add the cooked penne pasta to the skillet and mix everything thoroughly.
- Sprinkle shredded cheese on top and stir until melted. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
