Description

A comforting blend of shrimp, crab, and scallops topped with a golden Cheddar Bay biscuit crust.


Ingredients

  • 2 cups cooked seafood mix (shrimp, crab, and scallops)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1/2 cup diced onion
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 package (8.5 oz) Cheddar Bay Biscuit mix
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup water


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the flour, garlic powder, Old Bay seasoning, salt, and black pepper. Cook for 1-2 minutes until bubbly.
  4. Whisk in the heavy cream and broth gradually, stirring constantly until thickened, about 3-5 minutes.
  5. Add the cooked seafood and frozen mixed vegetables to the skillet and stir to combine. Remove from heat and pour into a pie dish.
  6. Prepare the Cheddar Bay Biscuit mix according to package instructions, adding the cheddar cheese and water. Mix until just combined.
  7. Drop spoonfuls of the biscuit dough over the seafood mixture, covering as evenly as possible.
  8. Bake for 20-25 minutes, until biscuits are golden brown.
  9. Allow to cool for 5 minutes before serving.

Notes

For a personal touch, add fresh herbs such as thyme or parsley to the filling.
