Ingredients
- 1 head of cauliflower, chopped into florets
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Corn or flour tortillas
- 1/2 cup Greek yogurt or sour cream
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper until well-coated.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes until tender and slightly browned.
- Prepare the cilantro lime crema by mixing Greek yogurt or sour cream with chopped cilantro, lime juice, and salt in a bowl.
- Warm up your corn or flour tortillas in a skillet or microwave.
- Assemble the tacos by adding the roasted cauliflower to the tortillas and drizzling with cilantro lime crema.
- Add any additional toppings of your choice and serve immediately.
Notes
Adjust the heat by adding cayenne pepper or jalapeños for extra spice. For heartier tacos, consider adding sautéed peppers, onions, or beans.
