Description

A healthy twist on traditional fried rice, featuring riced cauliflower and fresh shrimp cooked with colorful vegetables for a delicious meal.


Ingredients

  • 1 medium cauliflower, riced
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until fragrant.
  2. Add the shrimp to the skillet and cook until pink, about 2-3 minutes.
  3. Push the shrimp to one side of the skillet and pour the beaten eggs onto the other side, scrambling them until cooked.
  4. Stir in the riced cauliflower and mixed vegetables, cooking for an additional 5 minutes until the cauliflower is tender.
  5. Add the soy sauce and sesame oil, mixing everything together. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions.

Notes

Use fresh shrimp for the best flavor. Consider prepping the riced cauliflower ahead of time for quicker cooking.
