A healthy twist on traditional fried rice, featuring riced cauliflower and fresh shrimp cooked with colorful vegetables for a delicious meal.
Ingredients
- 1 medium cauliflower, riced
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté until fragrant.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes.
- Push the shrimp to one side of the skillet and pour the beaten eggs onto the other side, scrambling them until cooked.
- Stir in the riced cauliflower and mixed vegetables, cooking for an additional 5 minutes until the cauliflower is tender.
- Add the soy sauce and sesame oil, mixing everything together. Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Use fresh shrimp for the best flavor. Consider prepping the riced cauliflower ahead of time for quicker cooking.
