Ingredients
- – 1 pound (454g) raw shrimp, thawed & peeled
- – 2 tablespoons (30 ml) olive oil
- – 1 teaspoon (5 ml) garlic powder
- – 1 teaspoon (5 ml) onion powder
- – 1/2 teaspoon (3 ml) dried oregano
- – 1/2 teaspoon (3 ml) dried basil
- – Few cracks of fresh black pepper
- – 20 grape tomatoes
- – 20 fresh basil leaves
- – 20 fresh cheese balls (Ciliegine, boconccini, or pearls)
- – 20 wooden skewers
- – Balsamic glaze
- – Freshly ground black pepper
Instructions
- Set your oven to 450°F and prepare a baking tray with foil, parchment, or a non-stick mat.
- In a bowl, combine the shrimp with olive oil, garlic and onion powders, oregano, basil, and a few turns of freshly cracked black pepper. Stir thoroughly, then spread the shrimp evenly on the lined baking tray.
- Cook in the oven for around 6-8 minutes, or until the shrimp are pink and cooked through. Serve hot for a main dish or appetizer, or let cool for assembling the skewers.
- Thread a shrimp, a grape tomato, a basil leaf, and a mozzarella ball onto each skewer, with the shrimp wrapping around the tomato if you like.
- Finish with a drizzle of balsamic glaze and sprinkle with freshly ground black pepper for garnish.
