Description

A quick and delicious pasta dish featuring canned salmon, cherry tomatoes, and fresh parsley, perfect for a comforting meal.

Ingredients

  • 8 oz pasta (spaghetti or your choice)
  • 1 can (14.75 oz) canned salmon, drained
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.
  4. Stir in the drained canned salmon and heat through.
  5. Add the cooked pasta to the skillet and toss to combine.
  6. Season with salt, pepper, and fresh parsley.
  7. Serve with Parmesan cheese on top if desired.

Notes

For variations, try different pasta shapes or add fresh herbs like basil. If the dish is too dry, a splash of pasta water can help.
