Ingredients
- 1 cup (240 ml) cornmeal (120 grams)
- 1 cup (240 ml) all-purpose flour (120 grams)
- 1 tablespoon (15 ml) baking powder (15 grams)
- 1/2 teaspoon (3 ml) baking soda (2.5 grams)
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1 tablespoon (15 ml) Cajun seasoning (15 grams)
- 1/4 cup (60 ml) granulated sugar (50 grams)
- 1 cup (240 ml) canned pumpkin puree (240 grams)
- 1/2 cup (120 ml) milk (120 milliliters)
- 1/4 cup (60 ml) vegetable oil (57 grams)
- 2 large eggs
- 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1/2 cup (120 ml) corn kernels, fresh or frozen (75 grams)
- 1/4 cup (60 ml) chopped green onions (25 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, Cajun seasoning, and sugar.
- In another bowl, whisk together the pumpkin puree, milk, melted butter, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium heat.
- Add shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil and add corn kernels and green onions. Cook for 2-3 minutes until softened.
- Pour the cornbread batter into the skillet over the corn and green onions.
- Arrange the cooked shrimp on top of the cornbread batter.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the cornbread is golden and cooked through.
- Remove the skillet from the oven and let cool slightly.
- Garnish with chopped cilantro before serving.
