Ingredients
- 12 ounces (340 g) (340 grams) fettuccine pasta
- 1 pound (454 g) (450 grams) large shrimp, peeled and deveined
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) vegetable oil
- 2 teaspoons (10 ml) Cajun seasoning
- 1 teaspoon (5 ml) paprika
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 1/2 teaspoon (3 ml) dried thyme
- 1/4 teaspoon (1 ml) cayenne pepper
- Salt to taste
- Black pepper to taste
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup (240 ml) (240 milliliters) coconut cream
- 1/2 cup (120 ml) (50 grams) grated vegan cheese
- 2 cloves garlic, minced
- 2 tablespoons (30 ml) chopped fresh parsley
Instructions
- Cook the fettuccine pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- In a large bowl, combine shrimp with Cajun seasoning, paprika, garlic powder, onion powder, thyme, cayenne pepper, salt, and black pepper. Mix to coat evenly.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add the red and yellow bell peppers. Sauté for about 4-5 minutes until they begin to soften.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally.
- Reduce heat to low and stir in the Parmesan cheese until melted and the sauce is smooth.
- Add the cooked fettuccine and shrimp back into the skillet. Toss to coat everything in the sauce.
- Cook for another 2-3 minutes until the pasta is heated through.
- Adjust seasoning with salt and black pepper to taste.
- Garnish with chopped fresh parsley before serving.
