Ingredients

  • 12 ounces (340 g) (340 grams) fettuccine pasta
  • 1 pound (454 g) (450 grams) large shrimp, peeled and deveined
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30 ml) vegetable oil
  • 2 teaspoons (10 ml) Cajun seasoning
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/2 teaspoon (3 ml) onion powder
  • 1/2 teaspoon (3 ml) dried thyme
  • 1/4 teaspoon (1 ml) cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup (240 ml) (240 milliliters) coconut cream
  • 1/2 cup (120 ml) (50 grams) grated vegan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons (30 ml) chopped fresh parsley


Instructions

  1. Cook the fettuccine pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
  2. In a large bowl, combine shrimp with Cajun seasoning, paprika, garlic powder, onion powder, thyme, cayenne pepper, salt, and black pepper. Mix to coat evenly.
  3. Heat olive oil and butter in a large skillet over medium-high heat.
  4. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add the red and yellow bell peppers. Sauté for about 4-5 minutes until they begin to soften.
  6. Stir in the minced garlic and cook for 1 minute until fragrant.
  7. Pour in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally.
  8. Reduce heat to low and stir in the Parmesan cheese until melted and the sauce is smooth.
  9. Add the cooked fettuccine and shrimp back into the skillet. Toss to coat everything in the sauce.
  10. Cook for another 2-3 minutes until the pasta is heated through.
  11. Adjust seasoning with salt and black pepper to taste.
  12. Garnish with chopped fresh parsley before serving.
