Ingredients

  • 12 large eggs (720g)
  • 1/2 pounds (225g) small to medium shrimp
  • 1/4 cup (60ml) Greek yogurt for creaminess
  • 1 tablespoon (15 ml) mustard
  • 1 teaspoon (5 ml) white vinegar
  • 2 teaspoons (10 ml) Cajun seasoning
  • Paprika to taste
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, finely chopped, for garnish
  • 1 tablespoon (15 ml) paprika
  • 2 teaspoons (10 ml) garlic powder
  • 2 teaspoons (10 ml) onion powder
  • 1/2 teaspoon (3 ml) ground black pepper
  • 1/4 teaspoon (1 ml) ground cayenne pepper
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried thyme


Instructions

  1. Combine the paprika, garlic powder, onion powder, black pepper, cayenne pepper, oregano, and thyme. Reserve 2 teaspoons of this blend for later use.
  2. Submerge the eggs in a saucepan with water, ensuring the water level is an inch above the eggs.
  3. Heat the water to a boil, then cover the pan, take it off the heat, and let the eggs rest for 12 minutes. Move them to an ice water bath to cool, then peel once they’ve cooled.
  4. For uncooked shrimp, rinse briefly and cook in boiling water for 2-3 minutes until they turn pink and opaque. Cool them in cold water, then peel and devein.
  5. Reserve one shrimp for each egg as a whole piece for decoration; chop the remainder and set aside.
  6. Prepare the Yolk Mixture
  7. Slice the cooled eggs lengthwise.
  8. Extract the yolks and place them in a bowl; arrange the egg whites on a serving platter.
  9. Mash the yolks and combine them with Greek yogurt, mustard, 1 teaspoon of Cajun seasoning, and white vinegar.
  10. Add salt and pepper to your liking.
  11. Gently mix in the chopped shrimp.
  12. Assemble the Eggs
  13. Use a spoon or piping bag to fill the egg whites with the yolk mixture.
  14. Put the remaining whole shrimp into a bowl.
  15. Mix in the remaining teaspoon of Cajun spice.
  16. Ensure each shrimp is well-coated, then place one shrimp on top of each filled egg.
  17. Lightly dust with paprika and sprinkle with chopped parsley for garnish.
