Ingredients

- 1 cup cooked shrimp, peeled and deveined (225 g)
- 1/2 cup corn kernels, fresh or frozen (85 g)
- 1/4 cup chopped green onions (25 g)
- 1 tablespoon chopped parsley (4 g)
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large mixing bowl, combine cornmeal, all-purpose flour, baking powder, Cajun seasoning, salt, and black pepper. Mix well.
- In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients. Stir until just combined.
- Gently fold in the cooked shrimp, corn kernels, green onions, and chopped parsley.
- Lightly grease the waffle iron with cooking spray or oil.
- Pour the batter onto the preheated waffle iron, spreading it evenly.
- Close the waffle iron and cook until the waffles are golden brown and crispy, about 5-7 minutes.
- Carefully remove the waffles and repeat with the remaining batter.
