  • 1 cup buttermilk (240 ml)
  • 2 large eggs
  • 1/4 cup melted beef tallow (60 ml)
  • 1 cup cooked shrimp, peeled and deveined (225 g)
  • 1/2 cup corn kernels, fresh or frozen (85 g)
  • 1/4 cup chopped green onions (25 g)
  • 1 tablespoon chopped parsley (4 g)


Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, combine cornmeal, all-purpose flour, baking powder, Cajun seasoning, salt, and black pepper. Mix well.
  3. In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Gently fold in the cooked shrimp, corn kernels, green onions, and chopped parsley.
