  • 450 grams salmon fillets, skinless (1 pound (454 g))
  • 15 ml olive oil (1 tablespoon)
  • 8 grams Cajun seasoning (1 tablespoon (15 ml))
  • Salt, to taste
  • Black pepper, to taste
  • 28 grams unsalted butter (2 tablespoons (30 ml))
  • 4 cloves garlic, minced
  • 240 ml heavy cream (1 cup)
  • 120 ml chicken broth (1/2 cup)
  • 45 grams grated Parmesan cheese (1/2 cup (120 ml))
  • 15 ml lemon juice (1 tablespoon)
  • 8 grams chopped fresh parsley (2 tablespoons (30 ml))
  • 2 grams paprika (1 teaspoon (5 ml))
  • 1 gram onion powder (1/2 teaspoon (3 ml))

Instructions

  1. Rinse and pat dry the shrimp and salmon fillets.
  2. Season the shrimp and salmon with Cajun seasoning, salt, and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the salmon fillets to the skillet and cook for 3-4 minutes on each side until cooked through. Remove and set aside.
  5. In the same skillet, add the shrimp and cook for 2-3 minutes until pink and opaque. Remove and set aside.
  6. Lower the heat to medium and add butter to the skillet.
  7. Once the butter is melted, add minced garlic and sauté for 1 minute until fragrant.
  8. Pour in the heavy cream and chicken broth, stirring to combine.
  9. Add grated Parmesan cheese, lemon juice, paprika, and onion powder to the sauce. Stir well.
  10. Allow the sauce to simmer for 2-3 minutes until slightly thickened.
  11. Return the salmon and shrimp to the skillet, spooning the sauce over them.
  12. Sprinkle chopped fresh parsley over the dish.
  13. Taste and adjust seasoning with additional salt and black pepper if needed.
  14. Serve immediately, garnished with extra parsley if desired.

Notes

  • Marinate shrimp and salmon in Cajun seasoning, salt, and pepper for 30 mins before cooking for enhanced flavors.
  • Substitute half of heavy cream with low-fat milk for a lighter dish.
  • Add cayenne pepper to sauce for a spicy kick, along with paprika and onion powder.
