Ingredients
- 1 lb large shrimp, deveined
- 2 lbs new potatoes, halved
- 4 ears corn, cut into pieces
- 1/4 cup Cajun seasoning
- 2 cloves garlic, minced
- 1 lemon, juiced
- Salt, to taste
- Fresh parsley, for garnish
- Water
Instructions
- In a large pot, bring water and salt to a rolling boil.
- Add the halved new potatoes and cook for about 10 minutes until tender but not mushy.
- Add the corn and cook for an additional 5 minutes.
- Stir in the shrimp and cook for 3-5 minutes until they turn pink and opaque.
- Add the Cajun seasoning, minced garlic, and lemon juice; stir gently to coat all ingredients.
- Drain the pot and serve immediately, garnished with fresh parsley.
