A flavorful and comforting Cajun fish soup made with fresh ingredients and bold spices.
Ingredients
- 1 lb white fish (such as cod or tilapia), cut into pieces
- 1 tablespoon Cajun seasoning
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cups fish stock or broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn (fresh or frozen)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the Cajun seasoning and cook for another minute.
- Pour in the fish stock and diced tomatoes (with juice). Bring to a boil.
- Reduce the heat and add the fish pieces and corn. Simmer for about 10-15 minutes, until the fish is cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley if desired.
Notes
Taste as you go: Adjust seasoning throughout the cooking process. Use frozen corn for convenience. If you like it spicy, add more Cajun seasoning at the end.
