Description

A flavorful and comforting Cajun fish soup made with fresh ingredients and bold spices.


Ingredients

  • 1 lb white fish (such as cod or tilapia), cut into pieces
  • 1 tablespoon Cajun seasoning
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cups fish stock or broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, carrots, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  2. Stir in the Cajun seasoning and cook for another minute.
  3. Pour in the fish stock and diced tomatoes (with juice). Bring to a boil.
  4. Reduce the heat and add the fish pieces and corn. Simmer for about 10-15 minutes, until the fish is cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley if desired.

Notes

Taste as you go: Adjust seasoning throughout the cooking process. Use frozen corn for convenience. If you like it spicy, add more Cajun seasoning at the end.
