Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 pound sweet potatoes, peeled and diced (450 g)
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) Cajun seasoning
- 1/2 teaspoon (3 ml) smoked paprika
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 8 ounces imitation crab meat (225 g)
- 2 green onions, sliced
- 2 tablespoons fresh parsley, chopped (30 ml)
- 1 tablespoon lemon juice (15 ml)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes to the skillet.
- Cook the sweet potatoes for 8-10 minutes, stirring occasionally, until they begin to soften.
- Add the diced onion and red bell pepper to the skillet.
- Sauté the vegetables for 5 minutes, or until the onion becomes translucent.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Sprinkle the Cajun seasoning, smoked paprika, salt, and black pepper over the vegetables.
- Mix well to evenly coat the vegetables with the spices.
- Add the lump crab meat to the skillet and gently fold it into the vegetable mixture.
- Cook for another 3-4 minutes until the crab meat is heated through.
- Remove the skillet from the heat.
- Stir in the sliced green onions and chopped parsley.
- Drizzle the lemon juice over the hash and mix gently.
- Serve the Cajun crab sweet potato hash warm.
