Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 pound sweet potatoes, peeled and diced (450 g)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) Cajun seasoning
  • 1/2 teaspoon (3 ml) smoked paprika
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 8 ounces imitation crab meat (225 g)
  • 2 green onions, sliced
  • 2 tablespoons fresh parsley, chopped (30 ml)
  • 1 tablespoon lemon juice (15 ml)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes to the skillet.
  3. Cook the sweet potatoes for 8-10 minutes, stirring occasionally, until they begin to soften.
  4. Add the diced onion and red bell pepper to the skillet.
  5. Sauté the vegetables for 5 minutes, or until the onion becomes translucent.
  6. Stir in the minced garlic and cook for 1 minute until fragrant.
  7. Sprinkle the Cajun seasoning, smoked paprika, salt, and black pepper over the vegetables.
  8. Mix well to evenly coat the vegetables with the spices.
  9. Add the lump crab meat to the skillet and gently fold it into the vegetable mixture.
  10. Cook for another 3-4 minutes until the crab meat is heated through.
  11. Remove the skillet from the heat.
  12. Stir in the sliced green onions and chopped parsley.
  13. Drizzle the lemon juice over the hash and mix gently.
