A vibrant and flavorful pasta salad with crab meat, cherry tomatoes, corn, and a kick of Cajun seasoning, perfect for summer gatherings.
Ingredients
- 8 ounces pasta (such as rotini or penne)
- 1 pound crab meat
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1/2 cup red bell pepper, diced
- 1/2 cup green onion, sliced
- 1/4 cup mayonnaise
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 1 tablespoon lemon juice
Instructions
- Cook the pasta according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the crab meat, cherry tomatoes, corn, red bell pepper, green onion, mayonnaise, Cajun seasoning, salt, pepper, and lemon juice.
- Add the cooled pasta to the mixture and toss until well combined.
