Ingredients
- 2 salmon fillets
- 15 ml vegetable oil
- 14 g vegetable oil
- 8 g Cajun seasoning
- 185 g long-grain white rice
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 480 ml chicken broth
- Salt, to taste
- Black pepper, to taste
- 8 g chopped fresh parsley
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Season the salmon fillets with Cajun seasoning, salt, and black pepper.
- Add the salmon fillets to the skillet, skin-side down.
- Cook the salmon for about 4-5 minutes on each side until cooked through.
- Remove the salmon from the skillet and set aside.
- In the same skillet, melt 1 tablespoon of butter over medium heat.
- Add the diced onion and red bell pepper to the skillet.
- Sauté the vegetables for 5 minutes until they are softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add 1 cup of long-grain white rice to the skillet.
- Stir the rice with the vegetables to coat it with butter.
- Pour in 2 cups of chicken broth.
- Bring the mixture to a boil, then reduce heat to low.
- Cover the skillet and let the rice simmer for 18-20 minutes until tender.
- Remove the skillet from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and season with salt and black pepper to taste.
- Stir in 2 tablespoons of chopped fresh parsley.
- Serve the Cajun butter salmon over the red pepper rice.
