Ingredients

  • 2 salmon fillets
  • 15 ml vegetable oil
  • 14 g vegetable oil
  • 8 g Cajun seasoning
  • 185 g long-grain white rice
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 480 ml chicken broth
  • Salt, to taste
  • Black pepper, to taste
  • 8 g chopped fresh parsley


Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Season the salmon fillets with Cajun seasoning, salt, and black pepper.
  3. Add the salmon fillets to the skillet, skin-side down.
  4. Cook the salmon for about 4-5 minutes on each side until cooked through.
  5. Remove the salmon from the skillet and set aside.
  6. In the same skillet, melt 1 tablespoon of butter over medium heat.
  7. Add the diced onion and red bell pepper to the skillet.
  8. Sauté the vegetables for 5 minutes until they are softened.
  9. Stir in the minced garlic and cook for 1 minute until fragrant.
  10. Add 1 cup of long-grain white rice to the skillet.
  11. Stir the rice with the vegetables to coat it with butter.
  12. Pour in 2 cups of chicken broth.
  13. Bring the mixture to a boil, then reduce heat to low.
  14. Cover the skillet and let the rice simmer for 18-20 minutes until tender.
  15. Remove the skillet from heat and let it sit, covered, for 5 minutes.
  16. Fluff the rice with a fork and season with salt and black pepper to taste.
  17. Stir in 2 tablespoons of chopped fresh parsley.
  18. Serve the Cajun butter salmon over the red pepper rice.
