Ingredients

  • 10 ounces (283 g) large raw shrimp, peeled and deveined, if needed
  • 1 teaspoon (5 ml) vegetable oil
  • 1 1/2 tablespoons (23 ml) hot sauce, mild, medium, or hot, your choice
  • 6 slider buns or dinner rolls, toasted
  • 1 head celery, divided thinly slice 3-4 stalks for the sliders and then cut the rest into celery sticks for dipping in blue cheese
  • 1/4 cup (60 ml) ranch dressing, plus more for serving use reduced-fat, if preferred
  • 2 ounces (57 g) feta cheese crumbles
  • ground black pepper


Instructions

  1. Pat the shrimp dry using paper towels to remove excess moisture.
  2. In a large pan, warm the oil over medium-high heat until it’s hot. Place the shrimp in the pan, turning them after about a minute when the bottom side is seared and slightly browned. Continue cooking for another 1-2 minutes until the shrimp are just opaque and fully cooked without overdoing it.
  3. Take the pan off the heat and coat the shrimp with the buffalo sauce.
  4. To make the sliders, put 3-4 shrimp on the lower half of each slider bun. Add the sliced celery, ranch dressing, and sprinkle with feta cheese crumbles. Cover with the top half of the bun.
  5. Present the sliders alongside celery sticks and extra ranch dressing for dipping.
