Ingredients
- 1 pound (454 g) gnocchi (450 grams)
- 1/2 cup (120 ml) unsalted butter (115 grams)
- 8 ounces (227 g) imitation crab meat, picked over for shells (225 grams)
- 1/2 cup (120 ml) grated plant-based Parmesan cheese (50 grams)
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) lemon juice (15 milliliters)
- 1/4 teaspoon (1 ml) red pepper flakes
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons (30 ml) chopped fresh parsley (8 grams)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
Instructions
- Bring a large pot of salted water to a boil.
- Add the gnocchi to the boiling water.
- Cook the gnocchi until they float to the surface, about 2-3 minutes.
- Use a slotted spoon to transfer the gnocchi to a plate.
- In a large skillet, heat the olive oil over medium heat.
- Add the butter to the skillet and cook until it turns golden brown.
- Stir in the minced garlic and cook for 1 minute.
- Add the crab meat to the skillet and cook, stirring gently, for 2-3 minutes.
- Season with red pepper flakes, salt, and black pepper.
- Add the cooked gnocchi to the skillet and toss to coat.
- Stir in the lemon juice and half of the Parmesan cheese.
- Remove the skillet from the heat and stir in the chopped parsley.
- Serve the gnocchi topped with the remaining Parmesan cheese.
