Ingredients
- Firm fish fillets (e.g., cod, halibut)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tomatoes, diced
- 1 can coconut milk
- Juice of 2 limes
- Salt and pepper to taste
- Fresh herbs (e.g., cilantro, parsley) for garnish
- Jasmine rice for serving
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened.
- Stir in the sliced bell pepper and diced tomatoes, cooking until the vegetables are tender.
- Pour in the coconut milk and lime juice, then season with salt and pepper.
