Description

A flavorful Brazilian fish stew, or moqueca, featuring firm fish fillets in a creamy coconut milk base, perfect for family gatherings.

Ingredients

  • Firm fish fillets (e.g., cod, halibut)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tomatoes, diced
  • 1 can coconut milk
  • Juice of 2 limes
  • Salt and pepper to taste
  • Fresh herbs (e.g., cilantro, parsley) for garnish
  • Jasmine rice for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened.
  3. Stir in the sliced bell pepper and diced tomatoes, cooking until the vegetables are tender.
  4. Pour in the coconut milk and lime juice, then season with salt and pepper.
  5. Add the fish fillets, gently pushing them down into the stew.
  6. Cover the pot and let it simmer for about 15-20 minutes or until the fish is cooked through.
  7. Serve the moqueca over jasmine rice, garnished with fresh herbs and an extra squeeze of lime juice.

Notes

Use fresh fish fillets for best flavor. You can customize the vegetables and serve with jasmine rice for a complete meal.
