Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 leek, sliced
- 1 fennel bulb, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups fish stock
- 1 teaspoon saffron threads
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lb mixed seafood (such as shrimp, mussels, and fish)
- Fresh parsley for garnish
- Crusty bread for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, leek, and fennel, and sauté until softened.
- Stir in the diced tomatoes, fish stock, saffron, and paprika. Bring to a boil.
- Reduce heat and simmer for 15 minutes. Season with salt and pepper to taste.
- Add the seafood to the pot and cook for an additional 5-7 minutes until the seafood is cooked through.
- Serve hot, garnished with fresh parsley and accompanied by crusty bread.
