Ingredients
- 1 pound (454 g) lobster
- 12 ounce (340 g) s cavatelli pasta (340 grams)
- 2 tablespoon s olive oil (30 ml)
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 cup (240 ml) cherry tomatoes, halved (about 150 grams)
- 1/2 cup chicken broth (120 ml)
- 1/4 teaspoon (1 ml) red pepper flakes
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (60 ml) fresh basil leaves, chopped (about 10 grams)
- 1/4 cup (60 ml) grated Parmesan cheese (25 grams)
- 1 tablespoon lemon juice (15 ml)
Instructions
- Bring a large pot of salted water to a boil.
- Add the lobster to the boiling water and cook for 8-10 minutes.
- Remove the lobster from the pot and let it cool.
- Once cooled, remove the meat from the lobster shells and chop it into bite-sized pieces.
- In the same pot, cook the cavatelli pasta according to package instructions until al dente.
- Drain the pasta and set it aside.
- Heat olive oil in a large skillet over medium heat.
- Add the shallot and garlic to the skillet and sauté for 2-3 minutes until softened.
- Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes.
- Pour the chicken broth into the skillet and stir well.
- Add the red pepper flakes, salt, and black pepper to the skillet and mix.
- Stir in the cooked lobster pieces and let them heat through for 2-3 minutes.
- Add the cooked cavatelli pasta to the skillet and toss to combine.
- Stir in the fresh basil leaves and cook for 1-2 minutes.
- Remove the skillet from the heat and add the grated Parmesan cheese.
- Drizzle with lemon juice and toss everything together.
- Adjust seasoning with additional salt and pepper if needed.
- Serve immediately.
