Ingredients

  • 4 salmon fillets (about 170 g each)
  • 2 tablespoons vegetable oil (30 ml)
  • 1 teaspoon paprika (5 g)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon dried oregano (1 g)
  • 1 teaspoon dried thyme (1 g)
  • 1 teaspoon black pepper (2 g)
  • 1 teaspoon salt (5 g)
  • 2 cups fresh spinach, chopped (60 g)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 1 tablespoon lemon juice (15 ml)
  • 1 tablespoon vegetable oil (14 g)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix paprika, garlic powder, onion powder, oregano, thyme, black pepper, and salt.
  3. Rub this spice mixture evenly over the surface of each salmon fillet.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  5. Add the chopped spinach to the skillet and sauté until wilted, about 2-3 minutes.
  6. Remove the skillet from heat and stir in the grated Parmesan cheese and lemon juice.
  7. Cut a slit in the side of each salmon fillet to form a pocket.
  8. Stuff each pocket with the spinach and Parmesan mixture.
  9. Heat the remaining 1 tablespoon of olive oil and 1 tablespoon of butter in an oven-safe skillet over medium-high heat.
  10. Sear the salmon fillets in the skillet, about 2 minutes per side, until the crust forms.
  11. Transfer the skillet to the preheated oven.
  12. Bake the salmon for 8-10 minutes until cooked through.
  13. Remove from the oven and let rest for a few minutes before serving.
