A delectable dish featuring flaky salmon fillets stuffed with a creamy mixture of spinach, cream cheese, and Parmesan, perfect for any dinner occasion.
Ingredients
- 4 salmon fillets (6 oz each, skinless)
- 2 cups fresh spinach
- 1/2 cup cream cheese, softened
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- Salt to taste
- Lemon wedges for serving
Instructions
- Cook the spinach in a skillet over medium heat until wilted, about 2-3 minutes. Drain off any excess liquid.
- In a bowl, mix the cooked spinach with softened cream cheese, grated Parmesan cheese, and minced garlic. Season with salt and pepper.
- Create a pocket in each salmon fillet by slicing horizontally.
- Fill the pockets of each salmon fillet with the spinach and cheese mixture.
- Rub a seasoning mixture of paprika, garlic powder, onion powder, black pepper, and salt over the tops of the stuffed salmon fillets.
- Heat olive oil in a skillet over medium-high heat and sear the salmon for 2-3 minutes on each side until blackened.
- Transfer the salmon to a preheated oven at 350°F (175°C) and bake for 10-12 minutes.
- Serve the salmon with lemon wedges.
Notes
For extra flavor, marinate the salmon in olive oil and spices before stuffing. Use breadcrumbs for added crunch if desired.
