Description

A delectable dish featuring flaky salmon fillets stuffed with a creamy mixture of spinach, cream cheese, and Parmesan, perfect for any dinner occasion.


Ingredients

  • 4 salmon fillets (6 oz each, skinless)
  • 2 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Lemon wedges for serving


Instructions

  1. Cook the spinach in a skillet over medium heat until wilted, about 2-3 minutes. Drain off any excess liquid.
  2. In a bowl, mix the cooked spinach with softened cream cheese, grated Parmesan cheese, and minced garlic. Season with salt and pepper.
  3. Create a pocket in each salmon fillet by slicing horizontally.
  4. Fill the pockets of each salmon fillet with the spinach and cheese mixture.
  5. Rub a seasoning mixture of paprika, garlic powder, onion powder, black pepper, and salt over the tops of the stuffed salmon fillets.
  6. Heat olive oil in a skillet over medium-high heat and sear the salmon for 2-3 minutes on each side until blackened.
  7. Transfer the salmon to a preheated oven at 350°F (175°C) and bake for 10-12 minutes.
  8. Serve the salmon with lemon wedges.

Notes

For extra flavor, marinate the salmon in olive oil and spices before stuffing. Use breadcrumbs for added crunch if desired.
