Description

A delightful blackened salmon dish stuffed with creamy spinach and Parmesan, perfect for gatherings and special occasions.


Ingredients

  • 4 salmon fillets (6 oz each, skinless)
  • 2 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Lemon wedges for serving


Instructions

  1. Cook the spinach in a skillet over medium heat until it wilts, about 2-3 minutes. Drain any excess liquid.
  2. In a bowl, mix the cooked spinach with cream cheese, Parmesan, and minced garlic. Season with salt and pepper.
  3. Create pockets in each salmon fillet by slicing horizontally, leaving one end intact.
  4. Fill each pocket with the spinach and cheese mixture.
  5. Combine paprika, garlic powder, onion powder, black pepper, and additional salt in a small bowl and rub over the stuffed salmon fillets.
  6. Heat olive oil in a skillet over medium-high heat and sear the fillets for 2-3 minutes on each side.
  7. Transfer the salmon to a preheated oven at 350°F (175°C) and bake for 10-12 minutes until cooked through.
  8. Serve with lemon wedges on the side.

Notes

For a spicy kick, consider adding a pinch of cayenne to the seasoning. Pair with light salads for a balanced meal.
