A delightful blackened salmon dish stuffed with creamy spinach and Parmesan, perfect for gatherings and special occasions.
Ingredients
- 4 salmon fillets (6 oz each, skinless)
- 2 cups fresh spinach
- 1/2 cup cream cheese, softened
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- Salt to taste
- Lemon wedges for serving
Instructions
- Cook the spinach in a skillet over medium heat until it wilts, about 2-3 minutes. Drain any excess liquid.
- In a bowl, mix the cooked spinach with cream cheese, Parmesan, and minced garlic. Season with salt and pepper.
- Create pockets in each salmon fillet by slicing horizontally, leaving one end intact.
- Fill each pocket with the spinach and cheese mixture.
- Combine paprika, garlic powder, onion powder, black pepper, and additional salt in a small bowl and rub over the stuffed salmon fillets.
- Heat olive oil in a skillet over medium-high heat and sear the fillets for 2-3 minutes on each side.
- Transfer the salmon to a preheated oven at 350°F (175°C) and bake for 10-12 minutes until cooked through.
- Serve with lemon wedges on the side.
Notes
For a spicy kick, consider adding a pinch of cayenne to the seasoning. Pair with light salads for a balanced meal.
