Ingredients

  • 4-6 6oz salmon fillets, skin-on
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon chipotle pepper
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons extra virgin olive oil (divided)
  • 1/2 cup sour cream (regular or dairy-free)
  • 1/4 cup mayo
  • 3 tablespoons fresh dill (chopped)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper


Instructions

  1. Prepare the dill sauce by mixing sour cream, mayo, dill, garlic, lemon juice, salt, and pepper in a bowl. Refrigerate until ready to serve.
  2. Preheat oven to 400°F (204°C) and dry each salmon fillet with a paper towel.
  3. Mix together paprika, onion powder, garlic powder, cayenne, chipotle, oregano, thyme, salt, and pepper to create the blackened seasoning.
  4. Coat the salmon fillets with the seasoning, drizzling 1-2 tablespoons of olive oil over the top.
  5. Heat a cast iron skillet over medium-high heat, adding 1 tablespoon of olive oil.
  6. Sear the salmon skin-side up for 1-3 minutes until charred, then flip to skin side down.
  7. Transfer the skillet to the preheated oven and bake for 10-14 minutes until the salmon flakes easily with a fork.
  8. Let the salmon rest briefly, then serve immediately with the dill sauce on the side.

Notes

For best results, ensure your skillet is adequately heated before adding the salmon. Adjust cooking times if using thicker or thinner fillets.
