Ingredients

  • 1 pound (454 g) (450 grams) cod fillets
  • 2 teaspoons (10 ml) (10 grams) paprika
  • 1 teaspoon (5 ml) (5 grams) onion powder
  • 1 teaspoon (5 ml) (5 grams) garlic powder
  • 1 teaspoon (5 ml) (5 grams) dried thyme
  • 1 teaspoon (5 ml) (5 grams) dried oregano
  • 1/2 teaspoon (3 ml) (2.5 grams) cayenne pepper
  • 1/2 teaspoon (3 ml) (2.5 grams) salt
  • 1/4 teaspoon (1 ml) (1.25 grams) black pepper
  • 2 tablespoons (30 ml) (30 grams) vegetable oil
  • 1 tablespoon (15 ml) (15 milliliters) lemon juice
  • 1 tablespoon (15 ml) (15 grams) chopped fresh parsley


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix paprika, onion powder, garlic powder, thyme, oregano, cayenne pepper, salt, and black pepper.
  3. Pat the cod fillets dry with paper towels.
  4. Rub the spice mixture evenly over both sides of the cod fillets.
  5. Heat a large oven-safe skillet over medium-high heat.
  6. Add 1 tablespoon of butter to the skillet and let it melt.
  7. Place the cod fillets in the skillet and cook for 2-3 minutes on each side until a crust forms.
  8. Transfer the skillet to the preheated oven.
  9. Bake the cod for 5-7 minutes, until it is cooked through and flakes easily.
  10. Meanwhile, melt the remaining tablespoon of butter in a small saucepan over low heat.
  11. Stir in the lemon juice and chopped parsley into the melted butter.
  12. Remove the cod from the oven and pour the Cajun butter over the fillets.
  13. Serve the blackened cod hot, with any remaining Cajun butter drizzled on top.
