Ingredients
- 1 pound (454 g) (450 grams) cod fillets
- 2 teaspoons (10 ml) (10 grams) paprika
- 1 teaspoon (5 ml) (5 grams) onion powder
- 1 teaspoon (5 ml) (5 grams) garlic powder
- 1 teaspoon (5 ml) (5 grams) dried thyme
- 1 teaspoon (5 ml) (5 grams) dried oregano
- 1/2 teaspoon (3 ml) (2.5 grams) cayenne pepper
- 1/2 teaspoon (3 ml) (2.5 grams) salt
- 1/4 teaspoon (1 ml) (1.25 grams) black pepper
- 2 tablespoons (30 ml) (30 grams) vegetable oil
- 1 tablespoon (15 ml) (15 milliliters) lemon juice
- 1 tablespoon (15 ml) (15 grams) chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix paprika, onion powder, garlic powder, thyme, oregano, cayenne pepper, salt, and black pepper.
- Pat the cod fillets dry with paper towels.
- Rub the spice mixture evenly over both sides of the cod fillets.
- Heat a large oven-safe skillet over medium-high heat.
- Add 1 tablespoon of butter to the skillet and let it melt.
- Place the cod fillets in the skillet and cook for 2-3 minutes on each side until a crust forms.
- Transfer the skillet to the preheated oven.
- Bake the cod for 5-7 minutes, until it is cooked through and flakes easily.
- Meanwhile, melt the remaining tablespoon of butter in a small saucepan over low heat.
- Stir in the lemon juice and chopped parsley into the melted butter.
- Remove the cod from the oven and pour the Cajun butter over the fillets.
- Serve the blackened cod hot, with any remaining Cajun butter drizzled on top.
