Ingredients
- 12 ounces (340 g) black pasta (340 grams)
- 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 3 cloves garlic, minced
- 1 teaspoon (5 ml) red pepper flakes (optional)
- 2 lemons, halved
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (60 ml) fresh parsley, chopped (15 grams)
- 1/4 cup (60 ml) grated vegetarian cheese (25 grams)
Instructions
- Bring a large pot of salted water to a boil.
- Add black pasta and cook according to package instructions until al dente.
- Drain the pasta and set aside, reserving 1/2 cup of pasta water.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet, season with salt and black pepper.
- Cook shrimp for 2-3 minutes on each side until opaque and pink.
- Remove shrimp from the skillet and set aside.
- In the same skillet, add remaining 1 tablespoon of olive oil.
- Add minced garlic and red pepper flakes; sauté for 1 minute.
- Place lemon halves cut side down in the skillet and char for 2-3 minutes.
- Remove charred lemons and squeeze juice over shrimp.
- Add cooked pasta to the skillet with garlic and toss to coat.
- Add reserved pasta water gradually to loosen the sauce as needed.
- Return shrimp to the skillet and mix with pasta.
- Season with additional salt and black pepper if desired.
- Stir in chopped parsley and grated Parmesan cheese.
- Serve immediately, garnishing with extra parsley and Parmesan if desired.
