Ingredients

  • 12 ounces (340 g) black pasta (340 grams)
  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 3 cloves garlic, minced
  • 1 teaspoon (5 ml) red pepper flakes (optional)
  • 2 lemons, halved
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) fresh parsley, chopped (15 grams)
  • 1/4 cup (60 ml) grated vegetarian cheese (25 grams)


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add black pasta and cook according to package instructions until al dente.
  3. Drain the pasta and set aside, reserving 1/2 cup of pasta water.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  5. Add shrimp to the skillet, season with salt and black pepper.
  6. Cook shrimp for 2-3 minutes on each side until opaque and pink.
  7. Remove shrimp from the skillet and set aside.
  8. In the same skillet, add remaining 1 tablespoon of olive oil.
  9. Add minced garlic and red pepper flakes; sauté for 1 minute.
  10. Place lemon halves cut side down in the skillet and char for 2-3 minutes.
  11. Remove charred lemons and squeeze juice over shrimp.
  12. Add cooked pasta to the skillet with garlic and toss to coat.
  13. Add reserved pasta water gradually to loosen the sauce as needed.
  14. Return shrimp to the skillet and mix with pasta.
  15. Season with additional salt and black pepper if desired.
  16. Stir in chopped parsley and grated Parmesan cheese.
  17. Serve immediately, garnishing with extra parsley and Parmesan if desired.
