Instructions
- Preheat oven to 400°F (200°C).
- Toss red potatoes with olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Spread potatoes on a baking sheet and roast for 20 minutes.
- Add green beans to the baking sheet with potatoes.
- Drizzle green beans with a little olive oil and toss with potatoes.
- Roast potatoes and green beans for an additional 15 minutes.
- In a small bowl, mix lemon juice, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Pour lemon-garlic mixture over roasted potatoes and green beans.
- Toss cherry tomatoes and fresh parsley with the roasted vegetables.
- Melt butter in a small pan over medium heat.
- Stir in paprika, lime zest, and lime juice into the melted butter.
- Cook basmati rice with water and a pinch of salt until tender, about 15 minutes.
