  • Red potatoes, 1 pound (450 g), quartered
  • Green beans, 1/2 pound (225 g), trimmed
  • Cherry tomatoes, 1 cup (150 g), halved
  • Fresh parsley, 1/4 cup (15 g), chopped
  • Beef tallow, 2 tablespoons (30 g)
  • Paprika, 1 teaspoon (2 g)
  • Lime, 1, zested and juiced
  • Basmati rice, 1 cup (190 g)
  • Water, 2 cups (480 ml)
  • Salted roasted peanuts, 1/2 cup (75 g), chopped
  • Avocado, 1, diced
  • Red onion, 1/4 cup (40 g), finely chopped
  • Cucumber, 1 cup (150 g), diced
  • Fresh cilantro, 1/4 cup (15 g), chopped


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss red potatoes with olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  3. Spread potatoes on a baking sheet and roast for 20 minutes.
  4. Add green beans to the baking sheet with potatoes.
  5. Drizzle green beans with a little olive oil and toss with potatoes.
  6. Roast potatoes and green beans for an additional 15 minutes.
  7. In a small bowl, mix lemon juice, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  8. Pour lemon-garlic mixture over roasted potatoes and green beans.
  9. Toss cherry tomatoes and fresh parsley with the roasted vegetables.
  10. Melt butter in a small pan over medium heat.
  11. Stir in paprika, lime zest, and lime juice into the melted butter.
  12. Cook basmati rice with water and a pinch of salt until tender, about 15 minutes.
  13. Fluff the cooked rice and mix with butter-lime mixture.
  14. Combine avocado, red onion, cucumber, and fresh cilantro in a bowl.
  15. Add chopped salted roasted peanuts to the avocado mixture.
  16. Serve roasted vegetables, seasoned rice, and avocado salad alongside seafood.
