Description

A refreshing shrimp ceviche bursting with flavors from fresh ingredients and zesty lime, perfect for summer gatherings.


Ingredients

  • lb. raw shrimp, peeled and deveined
  • 1 cup tomatoes, chopped
  • ½ cup English cucumber or Persian cucumbers, chopped
  • ¼ cup red onion, chopped
  • 1 jalapeno, deseeded and finely chopped
  • ¼ cup cilantro, chopped
  • 1 cup fresh lime juice (about 8-12 limes)
  • 1-2 avocados, diced or mashed, for serving


Instructions

  1. Chop the shrimp into bite-sized pieces and place them in a 9×13 inch pan.
  2. Pour 1 cup of fresh lime juice over the shrimp, ensuring they are well submerged.
  3. Cover the pan with saran wrap and let the shrimp marinate at room temperature for 1 hour.
  4. Transfer the pan to the refrigerator and let it marinate for an additional 1-2 hours until the shrimp is opaque and ‘cooked.’
  5. Chop the tomatoes, cucumber, onion, jalapeno, and cilantro while the shrimp marinates.
  6. Once the shrimp is ready, combine it with the remaining chopped ingredients and gently stir to coat evenly in lime juice.
  7. Spoon the ceviche into bowls and serve with diced or mashed avocado on the side.
  8. Enjoy with tortilla chips or tostada shells.

Notes
