Ingredients
- 1¼ lb. raw shrimp, peeled and deveined
- 1 cup tomatoes, chopped
- ½ cup English cucumber or Persian cucumbers, chopped
- ¼ cup red onion, chopped
- 1 jalapeno, deseeded and finely chopped
- ¼ cup cilantro, chopped
- 1 cup fresh lime juice (about 8-12 limes)
- 1-2 avocados, diced or mashed, for serving
Instructions
- Chop the shrimp into bite-sized pieces and place them in a 9×13 inch pan.
- Pour 1 cup of fresh lime juice over the shrimp, ensuring they are well submerged.
- Cover the pan with saran wrap and let the shrimp marinate at room temperature for 1 hour.
- Transfer the pan to the refrigerator and let it marinate for an additional 1-2 hours until the shrimp is opaque and ‘cooked.’
- Chop the tomatoes, cucumber, onion, jalapeno, and cilantro while the shrimp marinates.
- Once the shrimp is ready, combine it with the remaining chopped ingredients and gently stir to coat evenly in lime juice.
- Spoon the ceviche into bowls and serve with diced or mashed avocado on the side.
- Enjoy with tortilla chips or tostada shells.
