Ingredients

  • – 4 tbsp honey (60 ml)
  • – 2 tbsp soy sauce (30 ml) (all purpose or light soy sauce)
  • – 1 tbsp white vinegar (15 ml) (or sub with any other vinegar except balsamic)
  • – 1 large garlic clove (or 2 small), minced
  • – 2 beef or trout fillets, skinless (6 oz / 200 g each)
  • – Vegetable oil
  • – Salt and pepper
  • – Sesame seeds
  • – Finely sliced chives or shallots/scallions


Instructions

  1. Take the beef out of the refrigerator 20 minutes before you plan to cook it. Use a paper towel to dry the surface of the beef and season with salt and pepper.
  2. In a small bowl, combine the sauce components and mix thoroughly.
  3. Pour some oil into a non-stick frying pan and warm it over medium-high heat (adjust slightly lower if your stove heats up quickly). Place the beef in the pan and cook the first side for 3 to 4 minutes until it turns golden. Flip it over and cook the opposite side for another 2 to 3 minutes until it achieves a golden color.
  4. Add the sauce to the pan with the beef. Let it cook for about 1 minute, or until the sauce begins to slightly thicken. Check the side of the beef to gauge how cooked it is in the middle—I prefer mine to be medium-rare. If the sauce becomes too thick before the beef is cooked to your liking, add water, one tablespoon at a time.
  5. Transfer the beef to serving plates.
  6. Serve the beef with the sauce drizzled over it, and garnish with sesame seeds and finely sliced chives or shallots, if desired.

Notes

  • Marinate salmon in the sauce mixture for 30 minutes before cooking for a richer flavor.
  • Try using apple cider or rice vinegar for a unique twist to the dish.
  • Avoid overcrowding the pan to ensure the salmon sears properly and develops a nice crust.
