Ingredients
- – 8 oz (227 g) wide rice noodles
- – 2 Tbsp (30 ml) sesame oil (or canola)
- – 2 shallots, chopped
- – 2 carrots, thinly sliced
- – 1 large beef steak, chopped
- – 3 large cloves of garlic, minced
- – 1/2 tsp (3 ml) fresh minced ginger
- – 1 zucchini, thinly sliced
- – 1 green bell pepper, thinly sliced
- – 2 green onions, chopped
- – 1 roma tomatoes, sliced
- – 1 cup (240 ml) fresh Thai Holy Basil leaves (or substitute regular basil), roughly chopped
- – 3 Tbsp (45 ml) hoisin sauce
- – 1/3 cup (80 ml) soy sauce
- – 2 tsp (10 ml) soy sauce
- – 2 tsp (10 ml) brown sugar
- – 2 Tbsp (30 ml) water
- – 1 tsp (5 ml) Thai red chili paste, more or less, to taste (or substitute sriracha or crushed red pepper flakes)
Instructions
- Prepare the noodles by following the directions on the package.
- In a small bowl, combine the sauce ingredients and keep it ready for later use.
- In a wok or large frying pan, heat 1 tablespoon of oil on high heat. Sauté the shallots and carrots for 2 minutes.
- Pour in another tablespoon of oil into the pan. Add the beef pieces, seasoning with pepper, and cook until they are fully done.
- Stir in the minced garlic and ginger, cooking briefly for about 10 seconds.
- Incorporate the bell pepper, zucchini, tomato, and the white parts of the green onions into the mixture, cooking for an additional 2 minutes.
- Add the cooked noodles to the mixture in the pan and drench them in the prepared sauce. Stir and cook everything together for a few minutes until thoroughly heated.
- Take the pan off the heat and mix in the chopped basil leaves.
- Serve right away, topped with the remaining green onion and additional chili paste, sriracha, or crushed red pepper for extra heat if desired.
