Ingredients

  • 1 can (15 oz) cannellini beans, drained and rinsed (425 g)
  • 1 can (4.4 oz) sardines in olive oil, drained (125 g)
  • 1 cup cherry tomatoes, halved (150 g)
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped (15 g)
  • 2 tablespoon s olive oil (30 ml)
  • 1 tablespoon lemon juice (15 ml)
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Drain and rinse the cannellini beans thoroughly.
  2. Drain the sardines and set aside.
  3. In a large bowl, combine the drained beans and sardines.
  4. Add the halved cherry tomatoes to the bowl.
  5. Finely chop the red onion and add to the mixture.
  6. Chop the fresh parsley and mix it into the salad.
  7. Drizzle the olive oil over the salad ingredients.
  8. Add the lemon juice to the bowl.
  9. Season with salt and black pepper to taste.
  10. Toss the salad gently to combine all ingredients.
  11. Serve immediately or refrigerate for later use.
