Ingredients
- 2 salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon BBQ sauce
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 red onion, finely chopped
- Juice of 1 lime
- Salt and pepper to taste
- Cooked rice or quinoa for serving
- Fresh cilantro for garnish
Instructions
- Preheat the grill or oven to medium-high heat.
- Brush the salmon fillets with olive oil and coat with BBQ sauce.
- Grill the salmon for about 5-7 minutes per side, or until cooked through and flaky.
- In a bowl, combine diced mango, avocado, red onion, lime juice, salt, and pepper to make the salsa.
- Serve the grilled salmon over cooked rice or quinoa and top with mango avocado salsa.
- Garnish with fresh cilantro and enjoy!

Experiment with different BBQ sauces and add diced jalapeños for spice.
