Ingredients
- – 1 tablespoon white vinegar (15 ml)
- – 1 tablespoon sesame oil (15 ml)

- – 1/4 cabbage, thinly sliced
- – 1/3 cup mayonnaise (80 g)
- – 3 tablespoons (45 ml) sweet sauce
- – 2 tablespoons (30 ml) sriracha
- – 1 teaspoon rice vinegar (5 ml)
- – 1 cup all-purpose flour (120 g)
- – 1/4 teaspoon (1 ml) salt
- – 3/4 cup cold sparkling water (180 ml)
- – 1 ½ pound medium to large shrimp (680 g)
Instructions
- In a medium-sized bowl, combine the white vinegar, sesame oil, a pinch of salt, and white pepper, then whisk them together. Add the sliced cabbage and set it aside.
- In a small bowl, blend the mayonnaise, sweet sauce, sriracha, and rice vinegar until smooth, then set aside.
- In another medium bowl, mix the flour, salt, and sparkling water to create the batter.
- Pour two to three inches of oil into a pan and heat it to between 325°F and 350°F.
- Working in batches, coat a few shrimp in the batter, allowing any extra to drip off, then carefully place them in the hot oil. Fry for approximately 3-4 minutes, until they achieve a golden brown color, and then transfer them to paper towels to drain.
- Continue the process with the rest of the shrimp.
