Ingredients

  • – 1 tablespoon white vinegar (15 ml)
  • – 1 tablespoon sesame oil (15 ml)
  • – Pinch of salt
  • – Pinch of white pepper (optional)
  • – 1/4 cabbage, thinly sliced
  • – 1/3 cup mayonnaise (80 g)
  • – 3 tablespoons (45 ml) sweet sauce
  • – 2 tablespoons (30 ml) sriracha
  • – 1 teaspoon rice vinegar (5 ml)
  • – 1 cup all-purpose flour (120 g)
  • – 1/4 teaspoon (1 ml) salt
  • – 3/4 cup cold sparkling water (180 ml)
  • – 1 ½ pound medium to large shrimp (680 g)


Instructions

  1. In a medium-sized bowl, combine the white vinegar, sesame oil, a pinch of salt, and white pepper, then whisk them together. Add the sliced cabbage and set it aside.
  2. In a small bowl, blend the mayonnaise, sweet sauce, sriracha, and rice vinegar until smooth, then set aside.
  3. In another medium bowl, mix the flour, salt, and sparkling water to create the batter.
  4. Pour two to three inches of oil into a pan and heat it to between 325°F and 350°F.
  5. Working in batches, coat a few shrimp in the batter, allowing any extra to drip off, then carefully place them in the hot oil. Fry for approximately 3-4 minutes, until they achieve a golden brown color, and then transfer them to paper towels to drain.
  6. Continue the process with the rest of the shrimp.

Notes

  • For added color and texture, consider using a mix of shredded cabbage and carrots.
  • Adjust the sriracha amount in the sauce to suit your preferred spiciness level.
