Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F or set your air fryer to 375°F.
  2. Season the salmon with garlic powder, smoked paprika, salt, and black pepper.
  3. Coat the seasoned salmon pieces in the panko breadcrumbs thoroughly.
  4. Lightly drizzle the salmon bites with olive oil or use a spray for a crisp finish.
  5. Place them on a baking sheet or in the air fryer basket, ensuring they are evenly spaced.
  6. Bake or air fry the bites until golden brown and fully cooked, about 12-15 minutes.
  7. Prepare the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice.
  8. Once the salmon bites finish cooking, assemble the bowls with jasmine rice or cauliflower rice, purple cabbage, and salmon bites on top.
  9. Garnish with avocado slices, shredded carrots, green onions, cilantro, and a sprinkle of sesame seeds.

Notes

For best results, monitor the cooking time closely to avoid overcooking the salmon.
