Description

Crispy and flavorful Bang Bang Salmon Bites, coated in panko breadcrumbs and served with a delicious Bang Bang sauce.


Ingredients

  • 1 lb fresh salmon, skinless and cut into bite-sized cubes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • ½ cup shredded carrots
  • 2 green onions, sliced
  • Fresh cilantro and sesame seeds for garnish


Instructions

  1. Preheat the Oven or Air Fryer: Ensure your appliance reaches the desired temperature for optimal cooking.
  2. Season the Salmon: In a large bowl, combine the salmon cubes with garlic powder, smoked paprika, salt, and black pepper. Toss until every piece is evenly coated.
  3. Coat in Breadcrumbs: Pour panko breadcrumbs into a shallow dish. Dip each seasoned salmon cube into the breadcrumbs, pressing gently to adhere the coating. Arrange the coated bites on a baking sheet or air fryer basket.
  4. Bake or Air-Fry: For baking, place them in the oven for about 12-15 minutes until they turn golden brown. If using an air fryer, cook for around 8-10 minutes at a proper temperature until crispy.
  5. Make the Bang Bang Sauce: While the salmon cooks, whisk together the mayonnaise, sweet chili sauce, sriracha, optional honey, and lime juice in a bowl. Adjust the sriracha amount based on your desired spicy kick.
  6. Assemble the Bowls: Serve the salmon bites over jasmine rice or cauliflower rice. Top with shredded purple cabbage, avocado, carrots, and green onions. Drizzle with the Bang Bang sauce and finish with fresh cilantro and sesame seeds.

Notes

Ensure salmon cubes are uniform in size for even cooking. Adjust spice levels in the sauce to taste.
