Ingredients
- – 1 lb (454g) large shrimp, peeled and deveined
- – 1 tsp (5ml) vegetable oil
- – 1/2 tsp (2.5ml) salt
- – 1/2 tsp (2.5ml) fresh cracked black pepper
- – 1 lb (454g) lump crab meat
- – 1 cup (240ml) cracker crumbs, such as Simple Mills or Ritz
- – 2 cloves garlic, peeled and minced
- – 1/3 cup (80ml) fresh parsley, chopped
- – 1 lemon, zested and juiced, plus lemon wedges for serving
- – 2 oz (57g) melted unsalted butter
Instructions
- Heat your oven to 425°F.
- Slice the shrimp along the back, ensuring you don’t cut all the way through.
- Place the shrimp in a bowl and coat with vegetable oil, salt, and pepper. Put it aside for later.
- Prepare the stuffing by mixing together crab meat, cracker crumbs, minced garlic, chopped parsley, lemon juice, lemon zest, and melted butter. Stir until well combined.
- In a baking dish suitable for the oven, position the seasoned shrimp uniformly around the dish, with the cut sides down and tails pointing upward. If they don’t stay upright, it’s not a big deal since the stuffing will cover them.
- Distribute the stuffing evenly over and around the shrimp.
- Bake for 12 to 14 minutes, until the shrimp are just cooked and the top has a light golden color.
- For a more browned top, broil on high for an additional minute.
- Serve with extra lemon wedges on the side.
