Ingredients

  • – 1 lb (454g) large shrimp, peeled and deveined
  • – 1 tsp (5ml) vegetable oil
  • – 1/2 tsp (2.5ml) salt
  • – 1/2 tsp (2.5ml) fresh cracked black pepper
  • – 1 lb (454g) lump crab meat
  • – 1 cup (240ml) cracker crumbs, such as Simple Mills or Ritz
  • – 2 cloves garlic, peeled and minced
  • – 1/3 cup (80ml) fresh parsley, chopped
  • – 1 lemon, zested and juiced, plus lemon wedges for serving
  • – 2 oz (57g) melted unsalted butter


Instructions

  1. Heat your oven to 425°F.
  2. Slice the shrimp along the back, ensuring you don’t cut all the way through.
  3. Place the shrimp in a bowl and coat with vegetable oil, salt, and pepper. Put it aside for later.
  4. Prepare the stuffing by mixing together crab meat, cracker crumbs, minced garlic, chopped parsley, lemon juice, lemon zest, and melted butter. Stir until well combined.
  5. In a baking dish suitable for the oven, position the seasoned shrimp uniformly around the dish, with the cut sides down and tails pointing upward. If they don’t stay upright, it’s not a big deal since the stuffing will cover them.
  6. Distribute the stuffing evenly over and around the shrimp.
  7. Bake for 12 to 14 minutes, until the shrimp are just cooked and the top has a light golden color.
  8. For a more browned top, broil on high for an additional minute.
  9. Serve with extra lemon wedges on the side.
