Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup breadcrumbs (panko or Italian-style)
- 1/2 cup grated Parmesan cheese
- 1/4 cup melted butter
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 375°F.
- Rinse the shrimp under cold water and pat dry with paper towels.
- Drizzle olive oil over the shrimp and season lightly with salt and pepper.
- Combine breadcrumbs, grated Parmesan, melted butter, fresh parsley, green onions, minced garlic, lemon juice, and paprika in a mixing bowl. Mix until the stuffing holds together.
- Lightly oil a baking dish and place the shrimp in the dish.
- Spoon the stuffing generously onto each shrimp, arranging them in a single layer.
- Bake for about 25-30 minutes until shrimp are opaque and stuffing is golden brown.
