  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup breadcrumbs (panko or Italian-style)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup melted butter
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F.
  2. Rinse the shrimp under cold water and pat dry with paper towels.
  3. Drizzle olive oil over the shrimp and season lightly with salt and pepper.
  4. Combine breadcrumbs, grated Parmesan, melted butter, fresh parsley, green onions, minced garlic, lemon juice, and paprika in a mixing bowl. Mix until the stuffing holds together.
  5. Lightly oil a baking dish and place the shrimp in the dish.

  7. Bake for about 25-30 minutes until shrimp are opaque and stuffing is golden brown.
  8. Serve with lemon wedges and a sprinkle of fresh parsley on top.
