Ingredients

  • – 4 salmon fillets (4 oz/113 g each)
  • – 1 batch teriyaki sauce
  • – 2 cups cooked rice (480 ml)
  • – 2 cups cooked broccoli (480 ml)
  • – 1/3 cup diced scallion (80 ml)


Instructions

  1. If your salmon was frozen, ensure it thaws in the refrigerator overnight.
  2. Set your oven to warm up to 400°F.
  3. Prepare the teriyaki sauce.
  4. Coat a baking dish with a thin layer of oil to prevent sticking.
  5. Slice the salmon into cubes about an inch wide. Pour half of the teriyaki sauce over them.
  6. Alternatively, if you prefer, place the whole salmon fillets skin-side down and cover with half of the teriyaki sauce using a silicone brush for even spreading.
  7. If you’re short on time and can’t marinate, feel free to proceed with baking. Otherwise, let the salmon soak in the sauce for 20 minutes.
  8. Place in the oven without a cover and cook for 12-18 minutes, adjusting for your taste and the thickness of the salmon. If in smaller cubes, they will need 10-14 minutes.
  9. After 10 minutes, check the salmon; it should flake easily with a fork and separate from the skin. The cubed pieces should have a uniform color.
  10. For a crispy finish, you may broil the salmon briefly.
  11. Pour or sprinkle the rest of the teriyaki sauce over the salmon and save some for the rice or broccoli if you like.
  12. Add a garnish of sesame seeds, red pepper flakes, and diced scallions before serving. Enjoy!
