Ingredients

  • Breadcrumbs, 1/2 cup (120 ml) (60 grams)
  • Egg, 1 large
  • Garlic, 2 cloves, minced
  • Green onions, 2, chopped
  • Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (1 gram)
  • For the Tangy Avocado Sauce:
  • Beef bacon, 4 slices, cooked and crumbled
  • Vegetable oil, 1/4 cup (60 ml) (60 milliliters)
  • Egg, 1 large
  • Garlic, 2 cloves, minced
  • Green onions, 2, chopped
  • Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (1 gram)


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets in a food processor and pulse until finely chopped.
  3. Transfer the salmon to a large bowl.
  4. Add breadcrumbs, egg, minced garlic, chopped green onions, lemon juice, salt, and black pepper to the bowl.
  5. Mix the ingredients until well combined.
  6. Form the mixture into small meatballs, about 1 inch in diameter.
  7. Arrange the meatballs on the prepared baking sheet.
  8. Bake in the preheated oven for 15-20 minutes, until cooked through and lightly browned.
