Ingredients
- Salmon fillets, skinless, 1 pound (454 g) (450 grams)
- Breadcrumbs, 1/2 cup (120 ml) (60 grams)
- Egg, 1 large
- Garlic, 2 cloves, minced
- Green onions, 2, chopped
- Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
- Salt, 1 teaspoon (5 ml) (5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (1 gram)
- For the Tangy Avocado Sauce:
- Beef bacon, 4 slices, cooked and crumbled
- Vegetable oil, 1/4 cup (60 ml) (60 milliliters)
- Egg, 1 large
- Garlic, 2 cloves, minced
- Green onions, 2, chopped
- Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
- Salt, 1 teaspoon (5 ml) (5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (1 gram)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place salmon fillets in a food processor and pulse until finely chopped.
- Transfer the salmon to a large bowl.
- Add breadcrumbs, egg, minced garlic, chopped green onions, lemon juice, salt, and black pepper to the bowl.
- Mix the ingredients until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Arrange the meatballs on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes, until cooked through and lightly browned.
- For the avocado sauce, cut the avocado in half, remove the pit, and scoop the flesh into a blender.
- Add Greek yogurt, lime juice, chopped cilantro, salt, and black pepper to the blender.
- Blend until smooth and creamy.
