Description

Delightful baked salmon meatballs paired with a creamy avocado sauce, perfect for family meals or gatherings.


Ingredients

  • 1 lb fresh salmon, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
  2. Form the mixture into small meatballs, about 1-2 inches in size.
  3. Place the meatballs on the prepared baking sheet, ensuring they have enough space between them.
  4. Bake the salmon meatballs in the preheated oven for 15-18 minutes, or until cooked through and slightly golden.
  5. While the meatballs bake, prepare the creamy avocado sauce by blending avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper until smooth.
