Ingredients
- 1 lb fresh salmon, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh parsley, chopped
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1-2 inches in size.
- Place the meatballs on the prepared baking sheet, ensuring they have enough space between them.
- Bake the salmon meatballs in the preheated oven for 15-18 minutes, or until cooked through and slightly golden.
- While the meatballs bake, prepare the creamy avocado sauce by blending avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper until smooth.
