Description

A simple yet elegant baked salmon dish with a tangy lemon butter sauce, served with crispy roasted potatoes and broccoli.


Ingredients

  • 2 salmon fillets
  • 2 tablespoons butter
  • 1 lemon (juiced and zested)
  • Salt and pepper to taste
  • 2 cups potatoes (cubed)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 2 cups broccoli florets


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake for 20-25 minutes until crispy.
  3. While the potatoes are baking, season the salmon fillets with salt and pepper.
  4. In a small saucepan, melt the butter over medium heat, add lemon juice and zest, and stir.
  5. In the last 10 minutes of potato cooking time, add the salmon fillets to the baking sheet.
  6. After 5 minutes, add broccoli florets around the salmon and drizzle with lemon butter sauce.
  7. Bake everything for an additional 10 minutes or until salmon is cooked through and broccoli is tender.
  8. Serve salmon with roasted potatoes and broccoli, drizzling any remaining lemon butter sauce over the top.

Notes

Use fresh lemon for the best flavor. You can substitute olive oil with avocado oil for a healthier option.
