Ingredients
- 4 tilapia fillets (about 6 ounces each)
- 1/2 cup finely grated parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/4 cup mayonnaise
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (optional)
- Optional garnish: Lemon wedges, fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and prepare your baking dish by lightly greasing it with olive oil or cooking spray.
- In a medium bowl, combine parmesan cheese, panko breadcrumbs, mayonnaise, lemon juice, garlic powder, dried parsley, salt, and black pepper. Mix until well combined and slightly damp.
- Pat the tilapia fillets dry with paper towels to remove excess moisture.
- Coat each fillet with the parmesan mixture, pressing gently to ensure it sticks.
- Arrange the coated fillets in the baking dish, leaving space between each.
- Bake for 12-15 minutes until the fish is flaky and the crust is golden brown.
- For extra crispiness, broil for the last 1-2 minutes, watching closely to prevent burning.
- Remove from the oven and allow to rest for a couple of minutes before serving. Garnish with lemon wedges and fresh parsley if desired.
