Description

A delightful baked halibut with tender baby potatoes, seasoned with garlic and thyme for a nourishing meal that captures the essence of coastal cooking.

Ingredients

  • 2 halibut fillets
  • 2 cups baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the halibut fillets and halved potatoes in a baking dish with olive oil, garlic, thyme, salt, and pepper.
  3. Arrange lemon slices on top of the halibut.
  4. Bake for 20-25 minutes or until the fish is flaky and the potatoes are tender.
  5. Garnish with fresh parsley before serving.

Notes

For best results, check the fish for flakiness at the 20-minute mark. Adjust baking time for personal preference.
