Description

A delightful baked halibut dish featuring a crispy panko herb crust that enhances the natural flavors of the fish.


Ingredients

  • 2 halibut fillets (about 6 oz each)
  • ½ cup panko breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon parsley, chopped
  • 1 tablespoon dill, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper, to taste
  • (Optional) 1 garlic clove, minced
  • (Optional) ¼ teaspoon smoked paprika


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Pat halibut fillets dry and season both sides with salt and pepper.
  3. In a medium bowl, mix panko breadcrumbs, Parmesan, parsley, dill, olive oil, lemon zest, salt, and pepper.
  4. Place halibut fillets on the baking sheet. Spoon the panko mixture on top and press gently to adhere.
  5. Bake for 12–15 minutes until fish flakes easily with a fork and topping is golden brown.
  6. (Optional) Broil for 1–2 minutes for an extra-crispy crust.
  7. Remove from the oven, rest for 2 minutes, and serve with a squeeze of fresh lemon juice.

For the crispiest crust, allow the halibut to rest after baking. Customize the herb topping for varied flavors.
