Ingredients
- 1 1/2 – 2 pounds (680 – 907 g) large shrimp, 31 to 40 per pound, peeled and deveined
- Salt and pepper
- 1 cup (240 ml) chopped onion, about 1 medium yellow, white or red onion
- 1 teaspoon (5 ml) vegetable oil
- 1 teaspoon (5 ml) dried oregano
- ½ teaspoon (2.5 ml) salt
- 6 garlic cloves, finely minced or pressed
- 1 pound (454 g) orzo pasta
- 4 cups (960 ml) low-sodium chicken broth
- 1 cup (240 ml) water
- 1 (28-ounce) can (794 g) diced tomatoes, drained
- 1 cup (240 ml) frozen peas
- 1 cup (240 ml) crumbled cheese
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F. Use paper towels to dry the shrimp thoroughly, then lightly season with salt and pepper. Put them aside while you prepare the other ingredients. Use cooking spray to lightly coat a 9×13-inch baking dish and set it aside.
- In a large pot, mix the onion, oil, oregano, and 1/2 teaspoon of salt over medium-low heat. Cover and cook, stirring occasionally, until the onions become translucent, about 7-8 minutes. Keep an eye on it to prevent burning. Add the garlic and sauté for about 30 seconds.
- Add the orzo to the pot, raise the heat to medium, and stir frequently until the pasta is well-coated and slightly toasted, about 3-4 minutes.
- Pour in the broth and water, and cook, stirring occasionally, until the orzo is almost cooked but still firm, around 10-12 minutes. Incorporate the tomatoes, peas, and shrimp.
- Transfer the mixture into the greased baking dish. Evenly distribute the crumbled cheese over the top. Bake until the shrimp are fully cooked and the cheese is golden brown, approximately 18-20 minutes.
- Serve with wedges of lemon.
