Description

A delicious Baked Cod recipe with a creamy coconut lemon sauce that brings coastal flavors to your table.


Ingredients

  • 4 cod fillets (about 6 ounces each)
  • 1 cup coconut milk
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • Salt and pepper to taste
  • Fresh parsley or cilantro, for garnish
  • Lemon slices, for garnish


Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Grease a baking dish with olive oil.
  3. Place the cod fillets in the prepared baking dish.
  4. Season them with salt and pepper on both sides.
  5. Whisk together coconut milk, lemon juice, lemon zest, minced garlic, and grated ginger in a medium bowl.
  6. Pour the coconut lemon cream sauce over the seasoned cod.
