Ingredients
- 4 cod fillets (about 6 ounces each)
- 1 cup coconut milk
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- Salt and pepper to taste
- Fresh parsley or cilantro, for garnish
- Lemon slices, for garnish
Instructions
- Preheat your oven to 400°F (204°C).
- Grease a baking dish with olive oil.
- Place the cod fillets in the prepared baking dish.
- Season them with salt and pepper on both sides.
- Whisk together coconut milk, lemon juice, lemon zest, minced garlic, and grated ginger in a medium bowl.
- Pour the coconut lemon cream sauce over the seasoned cod.
- Bake in the oven for 15-20 minutes until the fish is opaque and flakes easily with a fork.
- Remove from the oven and sprinkle with fresh parsley or cilantro.
- Top with lemon slices to serve.
