Ingredients

  • 4 individual cod fillets (680 g)
  • Salt & pepper
  • 1 1/2 cups (355 ml) coconut milk
  • 2 teaspoons (10 ml) grated fresh ginger
  • 2 teaspoons (10 ml) curry paste
  • Chopped fresh cilantro (amount to taste)


Instructions

  1. Set your oven to heat at 400°F (200°C). Apply a sprinkle of salt and pepper to the cod fillets.
  2. On medium-high heat, combine coconut milk, ginger, and curry paste in a small pot, stirring until it becomes a smooth mixture. Spread a little of the sauce in a large baking dish. Lay the cod on top, then pour the rest of the sauce over it.
  3. Cook in the oven for 20 minutes, or until the cod turns fully white and separates effortlessly with a fork.
  4. Sprinkle cilantro over the fish and serve with plenty of the sauce.
